What Does Gratin Mean
Rule one: Never, ever microwave a leftover gratin. You will destroy the crust, and the gratin gods will weep. Instead, reheat it in the oven at 350°F until the top crisps up again. Your patience will be rewarded with loud, satisfying crunch sounds.
Rule two: If you’re at a potluck and someone brings a gratin, claim the corner piece. The corner has double crust, double surface area, double happiness. It’s science, and you have rights.
Rule three: Do not ask the chef “What’s in this?” if you want to keep enjoying it. Gratins are often loaded with cream, butter, and three kinds of cheese. Ignorance is bliss, and also delicious.
