This is where we get personal. Stop poking the steak with a fork. Every time you pierce it, you let precious juice run away. Use tongs. Be gentle.
And for the love of all things delicious, don’t press down on it with a spatula. That’s not “getting a better sear”—that’s squeezing out all the moisture. Treat it like a good friend: support it, don’t assault it.
Flip it only once. Put it down, let it cook 3–4 minutes, flip, cook again. This gives time for a real crust to form.
