Ground meat is different. Always cook it to 160°F. No exceptions. No pink allowed.
Why? Bacteria gets mixed in during grinding. The surface becomes the inside. So play it safe, genius.

A Quick Cheat Sheet
Pork chops (thick): Pull at 140°F, rest to 145°F. Medium-rare glory.
Pork tenderloin: Same. Pull at 140°F. Let it nap for five minutes.
Ribs: 200–203°F. Low and slow. Foil wrap at 165°F. Magic happens.
Ground pork: 160°F. No wiggle room. Your stomach demands order.
